In a small bowl mix together brown sugar, soy sauce, red onion, ground ginger, rice vinegar and sesame seeds.
Place pork roast in slow cooker. Pour the soy sauce mixture over pork.
Place the garlic cloves on top.
Cover and cook on low for 7 hours, or high for 4 hours.
When done, shred pork with a fork until its nice and shredded. Mix around in liquid and let sit on warm for a few minutes.
In meantime, make sour cream mixture. Mix together sour cream, lime juice, onion powder, chili powder, and ground ginger. Place in a small ziplock bag and cut tip of corner off.
Warm up corn tortillas in microwave or in a sauté pan.
Put together tacos by placing some pulled pork in tortilla, followed by shredded red cabbage, green onions and zesty sour cream.
