So many colors, so many flavors! This mediterranean quinoa salad is super tasty, and super healthy!
Quinoa can be so bland and boring. But when mixed with the right ingredients and seasonings, quinoa can be pretty damn delicious!
Fluffy quinoa is mixed with cucumbers, fresh basil, red onion, kalamata olives, sun-dried tomatoes, chickpeas, bell pepper, and feta cheese. Literally, so many flavors!
Just like any pasta salad, the flavor is even better when you let it sit in the fridge. The flavors marinate with each other. So this recipe is perfect for meal prep, or left overs!
You get a nice crunch from the crisp cucumber and bell pepper, and the best flavor combinations of sweet and salty from the feta, olives and sun-dried tomatoes. This is going to be a new go to recipe for me to have on hand for lunches or as a side!
Its a chilled salad, so its super easy to throw in a bowl and eat it up!
The lemon oregano dressing has even more flavor to offer in this salad! Fresh lemon juice mixed with olive oil, red wine vinegar, dijon mustard, maple syrup, garlic powder, cumin and of course, oregano!
It is SO GOOD! And adds to that sweet and salty flavor.
You will get a taste of everything in every single bite!
