Mediterranean Quinoa Salad

This recipe for mediterranean quinoa salad is bursting with fresh flavors! Fluffy quinoa is mixed with a bunch of flavorful ingredients, and tossed in a homemade lemon oregano dressing!

Ingredients
  

For The Salad
  • 1 cup uncooked quinoa
  • 1 red bell pepper, diced
  • 1 15 oz. can of chickpeas, rinsed and drained
  • 1/2 cup red onion, finely diced
  • 1/2 cup pitted kalamata olives, cut in quarters
  • 1/4 sundried tomatoes, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup crumbled feta
For The Lemon Oregano Dressing
  • 2 tbsp fresh lemon juice (juice of 1 lemon)
  • 1 tbsp red wine vinegar
  • 1/3 cup olive oil
  • 1 tbsp dijon mustard
  • 1 tsp real maple syrup
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp ground cumin
  • salt & pepper to taste

Method
 

  1. Cook the quinoa according to package directions, and set aside to cool when done.
  2. In a small bowl, mix together all of the ingredients for the lemon dressing. Set aside.
  3. In a large bowl, add all of your ingredients for the salad.
  4. Add quinoa to bowl when it's cooled down a bit. Mix everything together.
  5. Add the dressing to the salad and toss to combine.
  6. Let chill in the fridge for at least an hour before serving.
  7. Enjoy!
