Mediterranean Quinoa Salad
This recipe for mediterranean quinoa salad is bursting with fresh flavors! Fluffy quinoa is mixed with a bunch of flavorful ingredients, and tossed in a homemade lemon oregano dressing!

For The Salad
- 1 cup uncooked quinoa
- 1 red bell pepper, diced
- 1 15 oz. can of chickpeas, rinsed and drained
- 1/2 cup red onion, finely diced
- 1/2 cup pitted kalamata olives, cut in quarters
- 1/4 sundried tomatoes, finely chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup crumbled feta
For The Lemon Oregano Dressing
- 2 tbsp fresh lemon juice (juice of 1 lemon)
- 1 tbsp red wine vinegar
- 1/3 cup olive oil
- 1 tbsp dijon mustard
- 1 tsp real maple syrup
- 1/2 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp ground cumin
- salt & pepper to taste
Cook the quinoa according to package directions, and set aside to cool when done.
In a small bowl, mix together all of the ingredients for the lemon dressing. Set aside.
In a large bowl, add all of your ingredients for the salad.
Add quinoa to bowl when it's cooled down a bit. Mix everything together.
Add the dressing to the salad and toss to combine.
Let chill in the fridge for at least an hour before serving.
