Method
- Cook the quinoa according to package directions, and set aside to cool when done.
- In a small bowl, mix together all of the ingredients for the lemon dressing. Set aside.
- In a large bowl, add all of your ingredients for the salad.
- Add quinoa to bowl when it's cooled down a bit. Mix everything together.
- Add the dressing to the salad and toss to combine.
- Let chill in the fridge for at least an hour before serving.
- Enjoy!
