Method
- Preheat oven to 350°. Line a muffin tin with liners or non stick spray.
- In a large bowl, mash bananas until they are smooth with no big lumps. Add melted butter and milk. Mix until well combined.
- Add in egg, vanilla, brown sugar and granulated white sugar. Mix until well combined.
- Add flour, salt, baking soda and pecans. Mix until everything is well combined.
- Using an ice cream scoop, cookie scoop or spoon, spoon batter into lined muffin tin, making sure that each muffin cup has the same amount of batter
- Add more pecan on top (optional).
- Bake in preheated oven for 18-20 minutes, or until a toothpick inserted in middle of muffin comes out dry and clean.
