Pecan Banana Muffins
These pecan banana muffins are super moist and soft. Loaded with bits and pieces of pecans to give them a perfect nutty flavor! Perfect for breakfast, a snack or dessert!

- 3 bananas, very ripe
- 1/4 cup unsalted butter, melted
- 1/4 cup whole milk OR half and half
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup pecans, chopped + more for topping
Preheat oven to 350°. Line a muffin tin with liners or non stick spray.
In a large bowl, mash bananas until they are smooth with no big lumps. Add melted butter and milk. Mix until well combined.
Add in egg, vanilla, brown sugar and granulated white sugar. Mix until well combined.
Add flour, salt, baking soda and pecans. Mix until everything is well combined.
Using an ice cream scoop, cookie scoop or spoon, spoon batter into lined muffin tin, making sure that each muffin cup has the same amount of batter
Add more pecan on top (optional).
Bake in preheated oven for 18-20 minutes, or until a toothpick inserted in middle of muffin comes out dry and clean.
