Method
- Preheat oven to 400°. Line a large baking sheet with parchment paper, or grease with oil.
- Add egg to a large bowl and scramble. Add chicken breasts to bowl with egg and mix them around to coat.
- In a large shallow bowl, mix together crushed cornflakes, flour and pinch of salt.
- Dredge chicken in crumbs, making sure to coat well on other sides. Place chicken on prepared baking sheet.
- Drizzle coated chicken breasts with olive oil.
- Bake in preheated oven for 20 minutes, or until internal temperature of chicken reaches 165°.
- Meanwhile, in a small bowl, mix together ingredients for the hot honey mustard sauce until smooth and creamy. If sauce stiffens, warm up in microwave.
- When chicken is done, spoon sauce over each piece. Return to oven for another 5 minutes. Sprinkle with some dried thyme for garnish (optional).
