Hot honey mustard chicken needs to be on your menu for dinner soon! Everyone will love it. Chicken breast is juicy and tender, breaded with a crunchy corn flake coating and drizzled with the tastiest sauce you will ever have!

The hot honey mustard is a sauce you whip up, using a mixture of spices and simple ingredients.

If you aren’t a fan of spicy and hot, don’t let the word “hot” steer you away from this recipe. The only “hot” ingredients used in this sauce is cayenne pepper, which really isn’t that hot after all.

I decided, after trying this recipe and falling in love with the flavor and texture, that cornflakes are going to be my new breading of choice when it comes to chicken. It gives the best crunch and texture! Not to mention, I think the cornflake coating helps hold the juices in, creating juicy chicken!

Look at that…pure perfection! We didn’t even need knives to cut into the chicken. That’s saying something…

Ingredients
  

For The Chicken

  • 2 lbs. chicken breast, thin sliced
  • 1 large egg
  • 2 cups corn flakes, finely crushed
  • 2 tablespoons whole wheat flour OR all purpose flour
  • pinch of salt
  • olive oil
  • dried thyme

For The Hot Honey Mustard Sauce

  • 4 tablespoons butter, melted
  • 1/4 cup honey
  • 1/4 cup dijon mustard
  • 2 tablespoons lemon juice
  • 1 tablespoon cayenne pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions
 

  • Preheat oven to 400°. Line a large baking sheet with parchment paper, or grease with oil.
  • Add egg to a large bowl and scramble. Add chicken breasts to bowl with egg and mix them around to coat.
  • In a large shallow bowl, mix together crushed cornflakes, flour and pinch of salt.
  • Dredge chicken in crumbs, making sure to coat well on other sides. Place chicken on prepared baking sheet.
  • Drizzle coated chicken breasts with olive oil.
  • Bake in preheated oven for 20 minutes, or until internal temperature of chicken reaches 165°.
  • Meanwhile, in a small bowl, mix together ingredients for the hot honey mustard sauce until smooth and creamy. If sauce stiffens, warm up in microwave.
  • When chicken is done, spoon sauce over each piece. Return to oven for another 5 minutes. Sprinkle with some dried thyme for garnish (optional).
  • Enjoy!
