Preheat oven to 400°. Line a large baking sheet with parchment paper, or grease with oil.
Add egg to a large bowl and scramble. Add chicken breasts to bowl with egg and mix them around to coat.
In a large shallow bowl, mix together crushed cornflakes, flour and pinch of salt.
Dredge chicken in crumbs, making sure to coat well on other sides. Place chicken on prepared baking sheet.
Drizzle coated chicken breasts with olive oil.
Bake in preheated oven for 20 minutes, or until internal temperature of chicken reaches 165°.
Meanwhile, in a small bowl, mix together ingredients for the hot honey mustard sauce until smooth and creamy. If sauce stiffens, warm up in microwave.
When chicken is done, spoon sauce over each piece. Return to oven for another 5 minutes. Sprinkle with some dried thyme for garnish (optional).
