This is such a simple recipe, using only a few ingredients.
Sweet potatoes, olive oil, salt, onion powder, and Mrs. Dash garlic & herb seasoning. That. Is. It.
So simple, whole and healthy. I love making these as a side with burgers, or as a snack.
I must warn you though…these do not last long! Once they come out of the oven, they will magically disappear.
First things first, you want to preheat your oven to 390 degrees.
While your oven is preheating, you want to prepare your sweet potatoes by washing, and peeling them.
Now you want to slice your potatoes the long way, cutting them into long fry shapes.
They don’t have to all be perfect or the same exact size. Just make sure they are for the most part. If the piece is too thick, it might be a little mushy rather than crispy when it cooks.
Place the cut up potatoes in a large bowl. Drizzle olive oil on top, and spices (except for salt). You want to sprinkle the salt on AFTER they are down cooking. Salt tends to make them harder to crisp and more mushy when done.
Use your hands to mix and evenly coat each potato with olive oil and spices.
Spread them out evenly on a large baking sheet with parchment paper. Make sure each fry has its own space, and they aren’t on top of each other.
Cook for 45 to 50 minutes.
Sprinkle evenly with salt.
Enjoy with ketchup or your favorite aioli!
