Caramelized onion focaccia bread has the perfect flavor combinations!
Focaccia, meet honey. When combined, they create beautiful flavors!
The sweetness of the honey, the saltiness of the parmesan cheese…YUM!
If you have a Kitchen Aid stand mixer, and happen to have the dough hook attachment…use it! It kneads the bread so well. Why do the work when you don’t have to?!
If you don’t have a stand mixer, no biggie. Make sure to use a wooden spoon when mixing the dough, and knead it with your hands on a well floured surface.
Now, let’s get into this recipe!
For this recipe you will need dry yeast, warm water, honey, bread flour, salt, olive oil, a red onion, rosemary, and shredded parmesan cheese.
In a large mixing bowl, add your dry yeast, water and honey. Mix together and let rest for about 10 minutes. There should be little bubbles forming at the top.
Now add the flour, 1 tbsp olive oil, 1 tsp salt. Mix with dough hook attachment, or wooden spoon. If you don’t have a stand mixer, mix the ingredients together until combined, then turn dough onto a well floured surface and knead by hand for about 5-7 minutes. Otherwise, knead dough with dough hook attachment for 7 minutes.
The dough should look nice and smooth.
After you are done kneading, keep dough in bowl, and cover with a kitchen towel, or plastic wrap. Let sit and rise about 1 hour.
In the meantime while your dough is rising, you want to caramelize your onion.
Slice onion in thin long pieces.
Heat 1 tbsp of olive oil in a large frying pan. Caramelize onions for about 10-15 minutes on medium heat, or until onions start to brown. Make sure not to burn them. They will be cooking more in the oven with the bread.
When the onions are done, set aside.
When dough is ready, place in a lightly oiled circular baking dish, or square baking pan/dish. Poke holes in dough with your finger.
Drizzle 1 tbsp olive oil on top. Add the caramelized onions, parmesan cheese, rosemary, and salt.
Bake for 20 minutes or until focaccia is golden brown.
