Preheat oven to 450 degrees.
In large stand mixer, mix together yeast, water, and honey.
Let rest for about 10 minutes. Little bubbles should start forming at top.
Add flour, 1 tbsp olive oil, and 1 tsp salt. Mix with dough hook attachment and knead for about 5-10 minutes.
If you don't have a stand mixer, mix together with a wooden spoon until dough turns smooth and into a ball shape. Turn dough on to a well floured surface and knead with hands for 5-7 minutes.
Place dough in a lightly oiled bowl. Cover with kitchen towel or plastic wrap for about an hour.
In meantime, caramelize onion.
Slice onion in thin long pieces.
In a large frying pan, heat 1 tbsp of olive oil and add onion.
Caramelize for about 10-15 minutes on medium heat or until onions brown. Make sure not to burn them.
When onions are done, set aside.
When dough is ready, place in a lightly oiled circular baking dish, or square baking dish.
Use finger to poke holes on top of dough.
Drizzle 1 TBSP of olive oil on top of dough evenly.
Top with caramelized onions, parmesan cheese, rosemary, and salt.
Bake for 20 minutes, or until the focaccia is golden brown.
