Beets are already sweet, but can be kind of bland by themselves. Unless there are pickled beets, like the ones you buy at the grocery store in the can.
That’s why I decided to dress mine up with the goat cheese and balsamic.
For this recipe you will need a bundle of beets. I had three large beets in my bundle. Salt, olive oil, goat cheese and balsamic glaze.
You want to wash the beets and get the dirt off. Cut off the stems and the bottoms, then peel the skin off with a peeler, or knife.
Be careful, they will turn your hands purple!…But it will come out. Just be careful with getting the beet juice on areas that will stain.
Use some heavy duty tin foil, and create a baking tray for your beets.
Place the beets inside the foil.
Drizzle olive oil on top of each beet.
Cover the beets entirely with foil.
Make sure it is sealed tightly at the top and sides.
I placed a baking sheet underneath my foil package just incase there was a leak and to catch any olive oil drippings.
Bake the beets for about 45-60 minutes. It depends on the size of the beet. Some may take longer to cook if they are larger. Take a knife and poke the middle of the beet. If it goes in easily, its done.
When they are still hot, cut beet into four sections, sprinkle goat cheese on top, and drizzle with balsamic glaze.
