Preheat oven to 400 degrees.
Wash beets. Cut off stems and ends. Peel skin off.
Place beets in tin foil.
Drizzle olive oil on top of each beet.
Make sure to seal up your tin foil so no air can get in or out.
Bake for 45-60 minutes.
Beets are done when a knife goes through middle of beet easily.
While hot, carefully cut beet into four pieces. Sprinkle with goat cheese and drizzle with balsamic glaze.
