First of all…I am a vegetarian, so whatever meat recipes I make, my husband is my taste tester. And a very good one at that. He enjoyed this recipe very much. Said it was very tasteful, and delicious. I’ll take it!
This recipe is quite easy, and makes your kitchen smell amazing. It looks so beautiful when it’s all cooked and topped with some fresh herbs for looks (if you’re trying to impress someone special).
The stars of the show are butter and fresh herbs. Well, technically I guess the chicken is the star of the show. But the butter and herbs is what makes the chicken taste amazing.
If you don’t happen to have a garden bed over flowing with fresh herbs like I do, you can always use dried herbs, or get some fresh ones from the grocery store.
The herbs that I used are sage and thyme. Two of my favorite herbs to cook with.
I never used to cook with fresh herbs that much, but slowly I taught myself about different herbs – their flavors, how to use them, what to use them for and I realized how flavorful they make everything. I was hooked!
So first things first, you want to chop up your sage, and your thyme.
Now you want to melt your butter in the microwave. I heat mine up in 10 second increments, just to keep it from exploding inside the microwave.
Once your butter is melted, you want to add your chopped herbs to the butter, and mix.
Set aside the butter.
Preheat your oven to 375 degrees.
I don’t wash my chicken before cooking it. Some people do, but I don’t. I have heard mixed things about washing and not washing. You can do whatever you feel comfortable with.
Place chicken thighs on a pan lined with parchment paper.
You want to now spread the herbed butter mixture underneath the skin on the chicken thigh. I used a silicone basting brush. If you don’t have a basting brush, you can always use a spoon, or a cupped spatula.
Sprinkle some salt, onion powder and garlic powder on top of chicken.
Now your chicken thighs are ready for the oven.
Bake for 45 minutes.
Once 45 minutes is up, turn your ovens broiler on low heat, and broiler for about 1-2 minutes to get the chicken thigh skin nice and crispy.
You can add a sprig of thyme on each thigh for garnish, or serve them as is. Garnish or no garnish, they still taste the same!
