Balsamic Steak Gorgonzola Salad

Is it just me, or do you love a good colorful meal in the summer time?! This balsamic steak gorgonzola salad is bursting with colors and flavors that you just cant say no to!

Strips of sirloin steak are marinated in this awesome balsamic marinade. Oh, and tenderized. Can’t forget that! It makes all the difference. Trust.

You are probably thinking…”whats the difference?” or “why would she post the same recipe twice?”.

Well, they aren’t the same! They are actually really different. Different in ingredients, and in taste! Like the grilled corn That adds so much flavor of sweetness!

And the gremolata…

What is gremolata?

I asked google the same thing when I saw this recipe called for it. Its actually really tasty and easy to make! It’s a combination of minced basil leaves, parsley, garlic and lemon zest! It added the BEST flavor to this salad.

I like my salads packed with ingredients. Some salads can get pretty boring if its some lettuce tossed with tomatoes and cheese. You gotta add lots of flavor and ingredients to keep it from being boring!

And, of course…my favorite part of this salad was the crumbled gorgonzola. I am a huge fan of that cheese. Its so pungent, which gives the entire dish so much flavor!!

Balsamic Steak Gorgonzola Salad

Balsamic Steak Gorgonzola Salad

This recipe for balsamic steak gorgonzola salad is bursting with flavors, and loaded with fresh and delicious ingredients, including grilled corn on the cob!

Ingredients
  

For The Marinade

  • 1 lb. sirloin steak I used strips
  • 2 tbsps balsamic vinegar
  • 1 tbsp Worcestershire sauce
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp dijon mustard
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp ground pepper

For The Salad

  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 4 oz. gorgonzola cheese, crumbled
  • 2 8 oz. containers of lettuce of choice I used a green leaf mix
  • 1 corn on the cob, husk removed
  • 1 tbsp extra virgin olive oil for drizzling over corn

For The Gremolata

  • 2 tbsps basil leaves, minced
  • 2 tbsps parsley, minced
  • 1 clove of garlic, minced
  • 1 tbsp lemon zest

For The Balsamic Vinaigrette

  • 3 tbsps balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 tsp dijon mustard
  • dash of salt and pepper

Instructions
 

Marinate Steak

  • In a bowl, mix together ingredients for the marinade. Place steak in a large ziplock bag or large bowl. Pour marinade on top of steak and let marinate for at least 30 minutes. The longer the better!

Make Balsamic Vinaigrette

  • In a small bowl, whisk together ingredients for the balsamic vinaigrette. Cover and set aside until ready to use.

Make The Gremolata

  • In a small bowl, mix together the ingredients for the gremolata. Cover and set aside until ready to use.

Grill Steak And Corn

  • When your steak is ready to be grilled, turn grill on to medium/high heat. Place steak on heated grill and cook for 4-5 minutes on each side for medium rare, 5-7 minutes for medium or 8-10 minutes for medium-well.
  • Drizzle the husked cob of corn with olive oil and place on grill. Making sure to turn every 2-3 minutes to get nice grill marks on each side. When corn has enough grill marks, take off grill and set aside.

Prepare Salad

  • When steak is done, take off the grill and place on a plate, cover with foil and let sit for 5 minutes.
  • Cut corn off the cob by holding corn the long way on a plate and slicing down.
  • In a large bowl, mix your lettuce together with half of the halved tomatoes, red onion, gorgonzola crumbles, gremolata and corn.
  • Pour half of the balsamic vinaigrette in bowl with salad. Mix everthing together until everything is nice and coated.
  • Place salad on a large platter or bowl for serving. Cut steak into bite size pieces, going against the grain. Place steak on top of salad, along with the remaining tomatoes, red onion, gorgonzola crumbles, gremolata, corn and balsamic vinaigrette.
  • Enjoy!
