Cake Batter Protein Balls

These cake batter protein balls are perfect! They have the perfect texture, and perfect flavor! And the best part is…they are healthy!

If you’re looking for a delicious, sweet treat that is guilt free, then these cake batter protein balls are it!

They are gluten free, dairy free, and refined sugar free! Well…minus the sprinkles. And, you don’t have to bake them!

These protein balls consist of 4 simple ingredients. Cashew butter, pure maple syrup, almond extract, and oat flour. Simple, right?!

Mix all of those ingredients together, and you get this nice batter, with a great consistency! It won’t stick to your hands when rolling into balls. You can thank the fats from the cashew butter!

I used my smallest ice cream scoop to scoop out the same amount of batter. Then I rolled it out so it was nice and smooth.

Dipping them into sprinkles was a little tricky. Because there was no stickiness to the protein balls, they had a hard time sticking. I had to pretty much press the sprinkles in. But it eventually worked!

Of course, just like any food with sprinkles can be messy when biting into it. But its totally worth the little fall out of sprinkles onto your floor!

Ive said this before, and I’ll say it again. I love sprinkles! If I get the chance to work with sprinkles, I’m working with sprinkles!

They are just so bright and happy. Whats not to love about them?!

You can store these guys in an air tight container in your fridge for up to a week!

Ingredients
  

  • 1/2 cup cashew butter, salted If cashew butter is unsalted, add a pinch of salt to mixture.
  • 2 tbsps pure maple syrup
  • 1/2 tsp almond extract
  • 1/3 cup gluten free oat flour I used bobs red mill
  • sprinkles for rolling

Instructions
 

  • In a medium bowl, using a handheld mixer, mix all ingredients together, minus the sprinkles.
  • Using a tablespoon or tablespoon sized scoop, scoop dough and roll into balls.
  • Put some sprinkles in a bowl, and roll balls in sprinkles. You may have to push the sprinkles into the balls. They gave me some trouble with sticking, but they eventually stuck!
  • You can enjoy these protein balls right away, or let them chill in your fridge. I personally like them better chilled!
  • Store these protein balls in an air tight container, in fridge for up to 1 week!
  • Enjoy!
