Cookie season is upon us, and these chewy ginger molasses cookies are the perfect cookies that scream Christmas!

I’ve never been a fan of good old fashioned gingerbread cookies. I always thought they were either too dry, or just not tasty. Maybe it was the overpowering ginger/spice flavors.

These cookies are the perfect balance of flavors.

They have the perfect balance of flavors. And they have sweet, decadent molasses, which adds the best sweetness!

Are you a chewy cookie person, or crunchy? I am all for chewy cookies! If its hard and crunchy, forget it!

Chewy Ginger Molasses Cookies

These chewy ginger molasses cookies taste just like the holidays! The perfect amount of seasonal spices and molasses. Chewy and delicious!

Ingredients
  

  • 3/4 cups unsalted butter, soft
  • 3/4 cups dark brown sugar
  • 1/4 cup molasses
  • 1 tsp vanilla extract
  • 1 egg
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp ground ginger
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1/4 cup white granulated sugar (for coating)

Instructions
 

  • Preheat oven to 350°. Line a large baking sheet with parchment paper. Set aside.
  • In bowl of stand mixer, or large bowl using hand held mixer, cream together butter and brown sugar.
  • Add molasses, vanilla extract and egg. Mix until well combined.
  • Add flour, ground ginger, pumpkin pie spice, baking soda, and salt. Mix until well combined and dough forms.
  • Using an ice cream scoop or spoon, scoop two tablespoons of cookie dough and roll into ball. Coat dough ball in sugar and place on baking sheet. Continue with rest of dough.
  • Bake in preheated oven for 10-15 minutes or until cookies start to crack on top.
  • Let cool and enjoy!
