Chewy Ginger Molasses Cookies

- 3/4 cups unsalted butter, soft
- 3/4 cups dark brown sugar
- 1/4 cup molasses
- 1 tsp vanilla extract
- 1 egg
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp ground ginger
- 1 tsp pumpkin pie spice
- 1/4 tsp salt
- 1/4 cup white granulated sugar (for coating)
Preheat oven to 350°. Line a large baking sheet with parchment paper. Set aside.
In bowl of stand mixer, or large bowl using hand held mixer, cream together butter and brown sugar.
Add molasses, vanilla extract and egg. Mix until well combined.
Add flour, ground ginger, pumpkin pie spice, baking soda, and salt. Mix until well combined and dough forms.
Using an ice cream scoop or spoon, scoop two tablespoons of cookie dough and roll into ball. Coat dough ball in sugar and place on baking sheet. Continue with rest of dough.
Bake in preheated oven for 10-15 minutes or until cookies start to crack on top.
