Chocolate Chip Coffee Cake Muffins

These chocolate chip coffee cake muffins are better than the bakery! Soft and moist muffins with the perfect amount of chocolate chips, and a delicious cinnamon streusel in the middle, and on top!

Chocolate chip coffee cake muffins can be for breakfast, for dessert, or as a snack! I know chocolate chips aren’t the best thing to have in the morning, but life is just too short!

There is coffee cake streusel for topping so, I mean, that counts as a breakfast item, right?

Every streusel topped muffin I’ve had or made only had streusel on top. Never in the middle. And let me tell you, it makes a difference! It adds that something special to them. That extra flavor and texture.

Fall is coming, so bring on the cinnamon! Am I right?!

I’m a huge fan of cinnamon in my baked goods. Especially in baked goods for breakfast. It just has that comforting, homey flavor.

When it comes to baked goods, or baked anything really, looks does matter. But obviously taste is what matters the most. But these guys have that perfect muffin shape, which is so cute!

The muffin tops are perfect looking. I had to take a close up photo to show you guys!

Ok, but anyways, back to the flavor of these bad boys…

If you’re a chocoholic and love extra chocolate, these muffins aren’t your jam. They have chocolate chips, but not an overpowering amount. I’m not a fan of too much chocolate when it has other flavors to offer.

If these were chocolate chip muffins, then there would be more chocolate chips in them. But I didn’t want to take away from the coffee cake flavors, and streusel.

Chocolate Chip Coffee Cake Muffins

These chocolate chip coffee cake muffins are better than the bakery! Soft and moist muffins with the perfect amount of chocolate chips, and a delicious cinnamon streusel in the middle, and on top!

Ingredients
  

For The Streusel

  • 3/4 cup all purpose flour
  • 1/2 cup packed brown sugar
  • 1 tsp cinnamon
  • 6 tbsp cold butter, cubed

For The Muffins

  • 1/2 cup salted butter, melted
  • 1/2 cup real maple syrup
  • 2 tsp vanilla extract
  • 1/2 cup buttermilk if you don't have buttermilk, you can make your own buy mixing 1/2 cup milk + 1½ tsp vinegar
  • 1/2 cup plain greek yogurt
  • 2 eggs
  • 2 cups all purpose flour
  • tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup semi sweet chocolate chips

Instructions
 

Make Streusel

  • In a small bowl, add the flour, brown sugar, cinnamon and butter. Mix together with your hands until mixture is crumbly. Set aside.

Make Muffins

  • Line a 12 cup muffin tin with liners. Set aside.
  • In a large mixing bowl, whisk together melted butter, maple syrup, vanilla, buttermilk, greek yogurt, and eggs until smooth. Add flour, baking powder, cinnamon and salt. Mix until well combined. Fold in chocolate chips with spatula.
  • Using a cookie scoop or tablespoon sized spoon, scoop up batter and place in each cup, using only half of the batter.
  • Sprinkle half of the streusel on top of the batter in each cup.
  • Top each cup with remaining batter, and then remaining streusel on top.
  • Bake in preheated oven for 25-30 minutes, or until toothpick inserted in middle of muffin comes out clean.
  • Enjoy!
