These chocolate chip coffee cake muffins are better than the bakery! Soft and moist muffins with the perfect amount of chocolate chips, and a delicious cinnamon streusel in the middle, and on top!
1/2cupbuttermilkif you don't have buttermilk, you can make your own buy mixing 1/2 cup milk + 1½ tsp vinegar
1/2cupplain greek yogurt
2eggs
2cupsall purpose flour
2½tspbaking powder
1/2tspcinnamon
1/2tspsalt
1/2cupsemi sweet chocolate chips
Instructions
Make Streusel
In a small bowl, add the flour, brown sugar, cinnamon and butter. Mix together with your hands until mixture is crumbly. Set aside.
Make Muffins
Line a 12 cup muffin tin with liners. Set aside.
In a large mixing bowl, whisk together melted butter, maple syrup, vanilla, buttermilk, greek yogurt, and eggs until smooth. Add flour, baking powder, cinnamon and salt. Mix until well combined. Fold in chocolate chips with spatula.
Using a cookie scoop or tablespoon sized spoon, scoop up batter and place in each cup, using only half of the batter.
Sprinkle half of the streusel on top of the batter in each cup.
Top each cup with remaining batter, and then remaining streusel on top.
Bake in preheated oven for 25-30 minutes, or until toothpick inserted in middle of muffin comes out clean.
