These coffee cake cookies were so easy and fun to make! They could very well be one of the best tasting cookies I’ve ever made. They have the perfect consistency as well.

Not like your typical cookie, these bad boys have a nice cake texture to them. Which is perfect, seeing they are coffee cake cookies.

I can be pretty hard on myself when it comes to my baking. I am very critical, and always nitpick certain things with anything I cook or bake. But I have to say, I had zero complaints about these cookies. I couldn’t think of one thing to criticize!

Okay, well maybe there was one thing. The fact that these cookies were gone way too fast! Guess I’ll have to double my batch next time. Or even triple it! 🙂

But, I mean…come on! Just look at that cookie!! Look at that perfect, streusel crumble in the middle! Nothing but perfection in every single bite!

Coffee Cake Cookies

Ingredients
  

For The Streusel

  • 1/2 cup all purpose flour
  • 1/3 cup brown sugar, packed (light or dark)
  • 2 tsp cinnamon
  • pinch of salt
  • 5 tbsp softened butter, unsalted

For The Cookie Dough

  • cup all purpose flour
  • 3/4 cup cake flour
  • 1 tsp cornstarch
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 8 tbsp cold butter, unsalted, cut into cubes
  • 1/2 cup brown sugar, packed (light or dark)
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 large egg
  • 1 large egg yolk

For The Icing

  • 1/2 cup powdered sugar, sifted
  • 1 tbsp milk
  • 1 tsp pure vanilla extract

Instructions
 

Prepare Streusel

  • In a medium bowl combine the flour, brown sugar, cinnamon and salt together. Then add in the butter until small clumps form. I use a fork and then my fingers to work it all together. Refrigerate.

Make Cookie Dough

  • Preheat oven to 400°. Line a large baking sheet with parchment paper and set aside.
  • In a large bowl, combine the dry ingredients: all purpose flour, cake flour, corn starch, cinnamon, baking soda, baking powder and salt. Set Aside.
  • Add cubed butter and both sugars into the bowl of a stand mixer, using paddle attachment, or a hand held mixer. Cream butter and sugars together until nice and smooth, about 2 minutes.
  • Add in the egg, egg yolk and vanilla. Blend until mixed.
  • Gradually add in the dry ingredients. Mix until incorporated.
  • Using a large cookie scoop, scoop 8 large balls of dough and place on baking sheet.
  • Make an indent in each cookie using the back of cookie scoop.
  • Spoon in 1 tbsp of the streusel and fill in each cookie.
  • Bake for 9 to 11 minutes, or until edges appear set and are slightly golden brown. (They will seem super soft, but you don't want to over bake them. They will continue to bake when they are out of the oven and resting.)
  • Let the cookies cool completely on a cooling rack.
  • Mix together ingredients for icing once the cookies are cooled, and drizzle each cookie. Enjoy!!!
