Fluffernutter Cookies

These fluffernutter cookies are the classic sandwich, turned into a cookie! My favorite peanut butter cookie recipe, with thick swirls of gooey, marshmallow fluff!

After you try these fluffernutter cookies, ill let you decide which you like better! The classic sandwich, or these cookies. Id say its a very close tie!

If you’ve never heard of a fluffernutter sandwich, then chances are you aren’t from New England!

So you’ve got your white bread, some peanut butter, and marshmallow fluff, or creme. Thats it! Simple, easy and so good!

It’s one of those foods where you will randomly crave out of nowhere. At least thats the case for my family!

Ok, so thats enough talk about the sandwich. Let’s talk about these cookies!!

I don’t want to be biased, but it really is the best peanut butter cookie recipe I have ever made, and is now my go-to/favorite!

Ive had the idea of these cookies in my head for a while. But I kept putting it off because I thought for sure they would be a total fail. Or it would be impossible to mix the fluff into the cookie dough without completely absorbing it.

I wanted to make sure to get those beautiful, thick swirls of fluff! And I did! So happy I gave the recipe a try!

Fluffernutter Cookies

These fluffernutter cookies are the classic sandwich, turned into a cookie! My favorite peanut butter cookie recipe, with thick swirls of gooey, marshmallow fluff!

Ingredients
  

  • 1/2 cup salter butter, soft
  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1/2 + 1/4 cups all natural peanut butter, unsalted and unsweetened
  • cups all purpose flour
  • 3/4 tsps baking soda
  • 1/2 tsp baking powder
  • cups marshmallow fluff

Instructions
 

  • Preheat oven to 350°. Line a large baking sheet with parchment paper and set aside.
  • In a bowl of stand mixer or handheld mixer, cream together butter, granulated sugar and brown sugar.
  • Add egg, vanilla and peanut butter. Mix until smooth.
  • Add flour, baking soda and baking powder. Mix until well combined and smooth.
  • Using a spatula, carefully fold in fluff. You want to fold it in until its evenly distributed, but dont want to over fold. You want to make sure you have thick swirls!

  • Using a 1 1/2 tablespoon sized scoop, or using a heaping tablespoon sized scoop, scoop dough and place on lined baking sheet. I used an ice cream/cookie scoop, so I didnt have to roll them out in balls.

  • Bake in preheated oven for 8-10 minutes. The cookies will still be soft, but you want them to be! They will set perfectly while cooling off.
  • Enjoy!
