Cowboy Chicken

Cowboy chicken is packed with flavor and fresh ingredients! Chicken is baked under an abundance of southwest inspired ingredients.

Somewhere…underneath all of that delicious goodness, there are chicken breasts! Cowboy chicken lives up to its name, bursting with so many flavors that make me think of the southwest!

Look at all of those colors! We got the beans, the fire roasted tomatoes, jalapeños, corn, onions, peppers and much much more!

This recipe is as easy as laying out your chicken in a casserole dish, season the chicken with some salt, pepper and Italian dressing, and dumping your delicious mixture of ingredients on top of the chicken. Bake and enjoy!

Easy, right? This recipe is perfect for nights where you just have no time, or don’t want to spend your time cooking. Most of these ingredients I already had in the pantry, which is great, you’re also cleaning out your pantry, and making room for new stuff. Am I the only one with that issue?

For the cheese on top, you can use whichever cheese you prefer. I love cheddar cheese. I used a low fat shredded cheddar. Or, you don’t even have to use cheese if you want to cut down on the dairy.

When serving this dish, you want to make sure to get a little bit of everything on top of each chicken.

I served mine with some brown rice. You can serve this dish with whatever side you would like.

Not to mention, the amount of ingredients on top of the chicken is great, mixed in with some rice!

Cowboy Chicken

Servings 3 People

Ingredients
  

  • 2 LBS. Chicken Breasts, skinless & boneless
  • 1 15 oz. can Black Beans, rinsed and drained
  • 1 14 oz. can Fire Roasted Diced Tomatoes, drained well
  • 1/2 Cup Corn, frozen or canned
  • 1 Red Bell Pepper, diced
  • 1/2 1 Sweet Onion, diced
  • 1/4 Cup Jarred Jalapeños, diced
  • 3 Cloves of Garlic, minced
  • 2 TBSP Italian Dressing
  • 1 TBSP olive oil
  • 2 TBSP Balsamic Vinaigrette
  • 1 Lime juice from one lime
  • 1 Cup Shredded Cheese of Choice I used low fat cheddar cheese

Instructions
 

  • Preheat oven to 375º.
  • Spray a casserole dish with non stick spray, and lay our chicken breasts. Season with salt and pepper, and pour Italian dressing on top of chicken evenly.
  • In a large bowl, mix together black beans, tomatoes, corn, bell pepper, onion, jalapeños, garlic, olive oil, lime juice and balsamic vinaigrette.
  • Dump black bean mixture on top of chicken evenly. Bake for about 45-55 minutes in preheated oven.
  • Before the last 10 minutes is up, sprinkle your cheese on top and bake for remaining time.
  • Serve with rice or any side. Enjoy!
