Cowboy Chicken

Servings: 3 People

Ingredients
  

  • 2 LBS. Chicken Breasts, skinless & boneless
  • 1 15 oz. can Black Beans, rinsed and drained
  • 1 14 oz. can Fire Roasted Diced Tomatoes, drained well
  • 1/2 Cup Corn, frozen or canned
  • 1 Red Bell Pepper, diced
  • 1/2 1 Sweet Onion, diced
  • 1/4 Cup Jarred Jalapeños, diced
  • 3 Cloves of Garlic, minced
  • 2 TBSP Italian Dressing
  • 1 TBSP olive oil
  • 2 TBSP Balsamic Vinaigrette
  • 1 Lime juice from one lime
  • 1 Cup Shredded Cheese of Choice I used low fat cheddar cheese

Method
 

  1. Preheat oven to 375º.
  2. Spray a casserole dish with non stick spray, and lay our chicken breasts. Season with salt and pepper, and pour Italian dressing on top of chicken evenly.
  3. In a large bowl, mix together black beans, tomatoes, corn, bell pepper, onion, jalapeños, garlic, olive oil, lime juice and balsamic vinaigrette.
  4. Dump black bean mixture on top of chicken evenly. Bake for about 45-55 minutes in preheated oven.
  5. Before the last 10 minutes is up, sprinkle your cheese on top and bake for remaining time.
  6. Serve with rice or any side. Enjoy!
