When you think of a cookie, you don’t really think “pistachio”. When you think of pistachio, you don’t think “cookie”, for me at least.
These cream cheese pistachio cookies gave me a whole new perspective towards cookies, and pistachios! My husband is a perfect example. He was never a fan of pistachio flavored anything. He only liked eating the actual pistachios for a snack. I recently had a pistachio muffin, and he tried a bite and liked it. Well, he tried one of these cookies, and he loved them!
You don’t have to be a huge pistachio fan to enjoy or love these cookies. They have way more to offer than just the pistachio flavor!
If you like pistachios, pistachio ice cream, muffins, etc…you will love these cookies!
With chopped pistachios, and pistachio pudding mix, they have the perfect pistachio flavor. And the cream cheese gives them the best dense and moist consistency. They are the perfect little cookie dumplings!

There is a piece of pistachio in every single bite.
The recipe that I followed said to not use salted pistachios…but I did, and Im glad I did, because it gave the cookies an awesome sweet and savory taste!
To some of you, the color may be a huge turn off. I get it…green is never really the best color for any food item. I usually think of “green eggs and ham” or grass? But you have to just think you yourself, “pistachios, pistachios, pistachios”.
Even though these cookies can be stored in a container at room temperature, I bet they would be amazing chilled! Especially for the summer time.
