Method
- Preheat oven to 350 degrees.
- In large mixing bowl, cream together cream cheese, butter and sugar using a hand held mixer. Mix until combined, and fluffy.
- Add egg and vanilla. Mix until well combined.
- Add flour, baking powder, pudding mix and salt. Mix until everything is well combined. The dough will get thick and tough.
- Add chopped pistachios and mixx in until they are well combined.
- On a large baking sheet that's been lined or sprayed with non stick spray, drop a small ice cream scope full of dough. Or a tablespoon size scoop.
- They don't spread out a lot, so it's ok to put them somewhat close together.
- Bake for about 15 minutes, or until the edges start to turn a golden brown.
