Preheat oven to 350 degrees.
In large mixing bowl, cream together cream cheese, butter and sugar using a hand held mixer. Mix until combined, and fluffy.
Add egg and vanilla. Mix until well combined.
Add flour, baking powder, pudding mix and salt. Mix until everything is well combined. The dough will get thick and tough.
Add chopped pistachios and mixx in until they are well combined.
On a large baking sheet that's been lined or sprayed with non stick spray, drop a small ice cream scope full of dough. Or a tablespoon size scoop.
They don't spread out a lot, so it's ok to put them somewhat close together.
Bake for about 15 minutes, or until the edges start to turn a golden brown.
