Creamy Crockpot Chicken

This creamy crockpot chicken recipe is surprisingly a guilt free meal! Chicken is slow cooked in creamy goodness until tender and shredded. Along with carrots and onions!

This creamy crockpot chicken recipe was a made from scratch type of recipe. It was one of those nights where we had very little food or ingredients to cook with. I don’t mind having those types of nights though, because I have to be creative, and put my brain to work!

The first thing that came to mind was “crockpot”. I needed to find some basic ingredients to throw in, and I did! I had chicken broth, which is the perfect base for any crockpot meal. I also had chicken that was going to go bad, some canned corn, carrots and an onion!

I kept looking around for more ingredients to add…

I found some low fat cream cheese, low fat sour cream and half and half. Thats when the light bulb went off, and I thought of a creamy chicken type crockpot meal. And bam!…

With a few awesome spices, and the magic of your slow cooker…this meal was so flavorful and hearty, yet guilt free! As long as you use low fat for your dairy products.

You can use whatever you’d like to serve as the “bed” of this recipe. I used my mashed cauliflower recipe https://thehungrylyoness.com/2019/08/19/the-best-garlic-mashed-cauliflower/. But you can use mashed potatoes if cauliflower isn’t your thing. Or even some rice!

Creamy Crockpot Chicken

Creamy crockpot chicken is slow cooked until shredded, along with some veggies!

Ingredients
  

  • 1/2 Cup Chicken Broth
  • 1 lb. Chicken Breasts or Chicken Tenders
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 tsp Thyme
  • 1.4 tsp Oregano
  • 15 oz. Canned Corn
  • 3-4 Large Carrots, peeled and cut into smaller pieces
  • 1 Medium Yellow Onion, diced
  • 1 Cup Low Fat Cream Cheese half of an 8 oz. block
  • 1/3 Cup Half and Half
  • 2 tbsp Low Fat Sour Cream
  • Salt and Pepper, to taste
  • Green Onions, optional

Instructions
 

  • Add your chicken broth, garlic powder, onion powder, thyme, oregano, salt and pepper to crockpot. Mix around.
  • Add your chicken to broth mixture.
  • Add cut up onion, corn and carrots on top of chicken.
  • Add cream cheese.
  • Cover and cook for 7-8 hours on low, or 4-6 hours on high.
  • When done, take chicken out and shred with a fork. Place back in crockpot, along with 2 tablespoons of sour cream and mix together. The sour cream will thicken it up a little bit.
  • Turn heat to warm and keep uncovered before serving to let everything thicken up a bit.

  • Garnish with some sliced green onions (optional).
