Creamy Crockpot Chicken

Creamy crockpot chicken is slow cooked until shredded, along with some veggies!

Ingredients
  

  • 1/2 Cup Chicken Broth
  • 1 lb. Chicken Breasts or Chicken Tenders
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 tsp Thyme
  • 1.4 tsp Oregano
  • 15 oz. Canned Corn
  • 3-4 Large Carrots, peeled and cut into smaller pieces
  • 1 Medium Yellow Onion, diced
  • 1 Cup Low Fat Cream Cheese half of an 8 oz. block
  • 1/3 Cup Half and Half
  • 2 tbsp Low Fat Sour Cream
  • Salt and Pepper, to taste
  • Green Onions, optional

Method
 

  1. Add your chicken broth, garlic powder, onion powder, thyme, oregano, salt and pepper to crockpot. Mix around.
  2. Add your chicken to broth mixture.
  3. Add cut up onion, corn and carrots on top of chicken.
  4. Add cream cheese.
  5. Cover and cook for 7-8 hours on low, or 4-6 hours on high.
  6. When done, take chicken out and shred with a fork. Place back in crockpot, along with 2 tablespoons of sour cream and mix together. The sour cream will thicken it up a little bit.
  7. Turn heat to warm and keep uncovered before serving to let everything thicken up a bit.
  8. Serve on top of mashed cauliflower or mashed potatoes! I have a delicious and easy mashed cauliflower recipe. I posted the link above in my post. Check it out!
  9. Garnish with some sliced green onions (optional).
