Method
- Place a large baking sheet in oven, and preheat oven to 450°.
- Using another large baking sheet, line with paper towels. Place rinsed and drained chickpeas on paper towels. Spread out in even layer to let dry.
- You want to make sure your chickpeas are super dry, that way they will roast to be crispy. Any moisture will affect their texture.
- Take a few more paper towels and pat any excess moisutre left.
- Once your chickpeas are dry, transfer to a bowl.
- Add olive oil, salt and pepper to chickpeas and mix.
- Once oven is preheated, carefully take out pan and place chickpeas on pan in even layer.
- Bake for 20-25 minutes, making sure to shake pan halfway through baking time.
- When chickpeas are done, they will have a nice golden brown tint to them.
- Let cool, and enjoy!
- Store any leftovers in an airtight container.
