Crispy Roasted Chickpeas

These crispy roasted chickpeas have the perfect crunch, with a hint of salt! They are hearty and super satisfying. You won’t be able to have just a few!

After trying one of these crispy roasted chickpeas, my first thought was “where have you been all this time?!” Seriously, so good! So easy to make, using only a few ingredients.

I love love LOVE my snacks. Potato chips, cheddar puffs, cheese, crackers, you name it! But give me a healthier option that actually tastes good and leaves me wanting more, I’m all for it!

This recipe calls for chickpeas (obv), olive oil, salt and pepper. Chances are you already have those ingredients in your pantry.

The awesome thing with these roasted chickpeas is that you can get creative with flavoring. Salt and pepper is a great option thats always a hit, but you could mix things up and use so many other seasonings and spices. Even a sweet mixture would be tasty, like cinnamon and sugar!

The most important part of this recipe is making sure that your chickpeas are super dry. You want to get them as crunchy and crispy as possible. If there is a little bit of moisture, that will affect their texture.

Look at those beauts! I should warn you though, they do pop around during the roasting process. Kinda like popcorn kernels. So be careful when taking these guys out. You don’t want a hot chickpea popping up at your face!

Serve these guys at a party, or make them for yourself/family for a healthy and filling snack! They keep well in an air tight container.

Crispy Roasted Chickpeas

These crispy roasted chickpeas have the perfect crunch, with a hint of salt! They are hearty and super satisfying. You won't be able to have just a few!

Servings 2 cups

Ingredients
  

  • 15.5 oz. can of chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • black pepper, to taste

Instructions
 

  • Place a large baking sheet in oven, and preheat oven to 450°.
  • Using another large baking sheet, line with paper towels. Place rinsed and drained chickpeas on paper towels. Spread out in even layer to let dry.
  • You want to make sure your chickpeas are super dry, that way they will roast to be crispy. Any moisture will affect their texture.
  • Take a few more paper towels and pat any excess moisutre left.
  • Once your chickpeas are dry, transfer to a bowl.
  • Add olive oil, salt and pepper to chickpeas and mix.
  • Once oven is preheated, carefully take out pan and place chickpeas on pan in even layer.
  • Bake for 20-25 minutes, making sure to shake pan halfway through baking time.
  • When chickpeas are done, they will have a nice golden brown tint to them.
  • Let cool, and enjoy!
  • Store any leftovers in an airtight container.
