Crispy Roasted Chickpeas

These crispy roasted chickpeas have the perfect crunch, with a hint of salt! They are hearty and super satisfying. You won't be able to have just a few!

Ingredients
  

  • 15.5 oz. can of chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • black pepper, to taste

Method
 

  1. Place a large baking sheet in oven, and preheat oven to 450°.
  2. Using another large baking sheet, line with paper towels. Place rinsed and drained chickpeas on paper towels. Spread out in even layer to let dry.
  3. You want to make sure your chickpeas are super dry, that way they will roast to be crispy. Any moisture will affect their texture.
  4. Take a few more paper towels and pat any excess moisutre left.
  5. Once your chickpeas are dry, transfer to a bowl.
  6. Add olive oil, salt and pepper to chickpeas and mix.
  7. Once oven is preheated, carefully take out pan and place chickpeas on pan in even layer.
  8. Bake for 20-25 minutes, making sure to shake pan halfway through baking time.
  9. When chickpeas are done, they will have a nice golden brown tint to them.
  10. Let cool, and enjoy!
  11. Store any leftovers in an airtight container.
