I love roasted vegetables. To be completely honest, carrots are probably my least favorite vegetable to roast. Every time I made them, they would be too hard, or dry or just not taste good. These easy maple roasted carrots have changed my outlook on this orange root vegetable!
The carrots are tossed in maple syrup, yum! Seasoned with some salt, pepper and fresh rosemary. Creating the perfect flavor combinations!
Rosemary is my favorite herb to cook with during this time of the year. I use it in so many recipes, even for drink garnishes! It gives off this awesome pine scent and flavor.
You are free to use whichever type of carrot you’d like for this recipe. I used regular large carrots and cut any extra ones in half lengthwise so they all cooked evenly.
It smelt amazing in my kitchen while these carrots were roasting.
This recipe would be a perfect side dish for thanksgiving dinner, or Christmas dinner!
