Easy Maple Roasted Carrots

Roasted carrots are super tender, and cooked in a delicious maple glaze!
Prep Time 10 minutes
Servings: 4 people
Course: Side Dish

Ingredients
  

  • 12 Large Carrots, peeled make sure to cut any larger ones in half length wise so they cook evenly.
  • 3 tbsp Olive Oil
  • 1/2 tsp Pepper
  • Salt, to taste
  • 2 tbsp Maple Syrup
  • 1/4 tsp Fresh Rosemary, chopped + more for garnish (optional)

Method
 

  1. Preheat oven to 450°.
  2. Peel and cut up carrots.
  3. Add carrots to a large bowl along with olive oil, salt, pepper, maply syrup and rosemary. Mix until well combined.
  4. Place the carrots in a small casserole dish (I used a pie dish).
  5. Cover with foil and bake in preheated oven for 35-40 minutes.
  6. Carrots are done when tender.
  7. Garnish with rosemary sprigs (optional).
  8. Enjoy!
