Easy Maple Roasted Carrots

Roasted carrots are super tender, and cooked in a delicious maple glaze!

Ingredients
  

  • 12 Large Carrots, peeled make sure to cut any larger ones in half length wise so they cook evenly.
  • 3 tbsp Olive Oil
  • 1/2 tsp Pepper
  • Salt, to taste
  • 2 tbsp Maple Syrup
  • 1/4 tsp Fresh Rosemary, chopped + more for garnish (optional)

Instructions
 

  • Preheat oven to 450°.
  • Peel and cut up carrots.
  • Add carrots to a large bowl along with olive oil, salt, pepper, maply syrup and rosemary. Mix until well combined.
  • Place the carrots in a small casserole dish (I used a pie dish).
  • Cover with foil and bake in preheated oven for 35-40 minutes.
  • Carrots are done when tender.
  • Garnish with rosemary sprigs (optional).
  • Enjoy!
