French Onion Shredded Chicken

This French onion shredded chicken recipe is for onion lovers! Chicken is slow cooked in a pool of sweet, caramelized onions, herbs and sauces! The flavors of this dish were incredible!

Like most of you at the moment, I try to limit my grocery store trips as much as I can. I’ve been putting my mind to good use and try to get creative with recipes, using what I have. And thats when this recipe for French onion shredded chicken was born!

I almost always have onions on hand, which for this recipe, onions are the stars of the show. I usually have at least one type of meat in the freezer or fridge. This time I had some chicken tenders that were expiring in a few days.

When you open your fridge, and look on the side shelves, on the inside of the doors, theres a lot of condiments, sauces, dressings, etc. Am I right?

We happened to have steak sauce, Worcestershire sauce, sour cream and chicken broth. I then thought of another recipe of mine for caramelized onion dip https://thehungrylyoness.com/2020/01/31/caramelized-onion-dip/.

Why not combine that dip recipe with slow cooked shredded chicken?!

If you like onions, caramelized onions are like gold! I try to incorporate caramelized onions into recipes as much as I can. The flavors they have to offer make recipes taste that much better!

I served mine on top of brown rice. You can use whatever type of grain you’d like!

French Onion Shredded Chicken

This French onion shredded chicken recipe is for onion lovers! Chicken is slow cooked in a pool of sweet, caramelized onions, herbs and sauces! The flavors of this dish were incredible!

Ingredients
  

  • 1 tablespoon olive oil
  • 2 medium sweet onions, diced
  • 1 lb. chicken breast or tenders
  • 1/2 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt + more to taste
  • 1/2 teaspoon garlic powder
  • 1 tablespoon granulated sugar – for caramelizing onions
  • 1/4 cup steak sauce
  • 2 tablespoons worcestershire sauce
  • 1 teaspoon brown sugar
  • 1 cup sour cream
  • rice or grain of choice to serve with
  • chives or green onions for garnish (optional)

Method
 

  1. First you want to caramelize the onions. In large sauté pan over medium-high heat, add olive oil, chopped onions and 1 tablespoon of granulated sugar. Stir around occasionally and cook for about 15 minutes, or until onions start to turn brown.
  2. In slow cooker, add chicken broth, chicken breast or tenders, thyme, black pepper, salt, garlic powder, steak sauce, worcestershire sauce, brown sugar, sour cream and caramelized onions.
  3. Cover slow cooker and cook on HIGH heat for 2-3 hours or LOW heat for 4-6 hours.
  4. When done, take chicken out and shred with fork. Put chicken back in slow cooker and mix around. turn heat to warm and keep uncovered to help thicken everything up.
  5. Cook your grain of choice, and serve chicken on top!
