I know it seems a little cliche to be posting this Greek chickpea salad recipe on New Years Day, but why not?! Personally, I think it’s a great time to post this recipe. Today is the day the most people want to start the new year off right, and eat healthy.

When the holidays arrive, we all start to eat unhealthy. And if you don’t, good for you! I wish I was able to say “no” to all the delicious baked goods, and comfort food.

I like to look at it as, you only live once and life is too short. So treat yourself to the tasty food. The holidays come but once a year!

Okay, so back to this delicious and healthy recipe…

Loaded with nothing but nutrients for your body. And most importantly, the flavors this salad has to offer!

Soft, buttery chickpeas mixed with fresh, crisp and crunchy vegetables. Tossed in a vibrant flavored dressing that is super easy to whip together.

If you’re a fan of meal prep, or convenience, then you will benefit from this recipe. It makes quite a bit! Have it for a side, a snack, a lunch, whatever!

Greek Chickpea Salad

Ingredients
  

For The Salad

  • 2 15 oz. cans of chickpeas, drained and rinsed
  • 2 large bell peppers (any color), chopped
  • 1 large tomato, chopped
  • 2 cucumbers, skinned + chopped
  • 1/4 cup red onion, finely diced

For Dressing

  • 2 ½ tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • 1 lemon, juiced
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh parsley, chopped + more for garnish (optional)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt + more for taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried dill

Instructions
 

  • Drain and rinse chickpeas. Place in a large bowl and set aside.
  • Chop up the bell peppers, tomato, cucumbers, red onion and add them to bowl with chickpeas.
  • Combine all dressing ingredients in a small bowl.
  • Pour dressing all over salad and toss to coat everything.
  • Serve immediately or chilled for a bit. The longer you let this salad sit, the tastier it is!
  • Enjoy!
