Method
- Drain and rinse chickpeas. Place in a large bowl and set aside.
- Chop up the bell peppers, tomato, cucumbers, red onion and add them to bowl with chickpeas.
- Combine all dressing ingredients in a small bowl.
- Pour dressing all over salad and toss to coat everything.
- Serve immediately or chilled for a bit. The longer you let this salad sit, the tastier it is!
