Grilled Caprese Flatbread Pizza

This grilled caprese flatbread pizza is a perfect meal for the Summer! The taste of fresh basil, tomatoes and gooey mozzarella cheese, drizzled with balsamic glaze. Not to mention the perfect crunch the flatbread has from the grill!

Ive always been skeptical about making pizzas on the grill. I always imagine a disaster happening with the dough seeping in between the spaces of the grill and just ending badly. But not with this grilled caprese flatbread pizza!

However, I decided to go a more safe route and try making flatbread pizzas. you can buy pre made flatbread that isn’t in an ooey gooey dough form.

You can get so creative when buying these pre made flatbreads. You can add any toppings you want! I chose to do a caprese style flatbread. Or margarita pizza, if you will. That is my all time favorite pizza.

With the very little amount of ingredients, and the minimal preparations and steps…grilled caprese flatbread pizza will be the new star of the grill. Bye bye hot dogs and hamburgers!

The garlic and herb olive oil is everything for this recipe. It’s the first step and first ingredient to go on the pizza. It makes the crust taste ten times better!

Biting into those big chunks of garlic…amazing!

You want to make sure to not burn the bottom of your flatbread!! It is very easy to burn seeing its on the grill. Once the cheese starts melting its done. You might want to check every few minutes to make sure the bottoms aren’t burning.

Grilled Caprese Flatbread Pizza

Ingredients
  

Garlic & Herb Olive Oil Spread

  • 2 TBSP olive oil
  • 2 Cloves Garlic (minced)
  • 1/4 TSP Oregano
  • 1/4 TSP Garlic Powder
  • 1/4 TSP Onion Powder
  • 1/8 TSP Salt

Flatbread Pizzas

  • 2 Tomatoes
  • 1 2 Pack Artisan Flatbread
  • Balsamic Glaze
  • 1 8 OZ. Fresh Mozzarella Ball
  • Fresh Basil Leaves, for garnish (optional)

Instructions
 

  • In a small bowl add olive oil, minced garlic, oregano, garlic powder, onion powder and salt. Mix together. Set aside.
  • Preheat grill to medium low heat.
  • Cut your tomatoes and mozzarella ball into thin circular slices.
  • Brush flatbreads with your garlic and herb olive oil mixture. Add cut up tomatoes and mozzarella cheese to flatbread.
  • Sprinkle with some black pepper.
  • Place flatbreads on grill and cook for 6-8 minutes. Mine took about 7 minutes. You want to keep checking bottoms of flatbreads to make sure they aren't burning.
  • Carefully take flatbreads off grill as soon as they are done. Drizzle with balsamic glaze, and sprinkle with fresh basil leaves.
  • Let cool a bit before slicing.
  • Enjoy!!
