Method
- Wash and cut peaches in half. Take pit out.
- Brush each peach with significant amount of olive oil on flat, cut side.
- Turn grill on medium low heat. Clean grates.
- Place peaches flat side down on grill. Cook covered for 3-4 minutes. Keep checking to make sure they aren't turning too dark.
- Once they are soft and have some nice char marks, flip over and cook for another minute, covered.
- When done, immediately top with a scoop of ice cream, and mint leaf for garnish (optional).
