Wash and cut peaches in half. Take pit out.
Brush each peach with significant amount of olive oil on flat, cut side.
Turn grill on medium low heat. Clean grates.
Place peaches flat side down on grill. Cook covered for 3-4 minutes. Keep checking to make sure they aren't turning too dark.
Once they are soft and have some nice char marks, flip over and cook for another minute, covered.
When done, immediately top with a scoop of ice cream, and mint leaf for garnish (optional).
