When I think of brussel sprouts, I don’t think of salad. I think of either roasted or boiled. They taste just like cabbage when they are raw. They have this satisfying crunch and crisp to them. This salad is satisfyingly filling!
Lately, I’ve been obsessed with making my own salad dressings. I never realized how easy it is to make. I usually go for a vinaigrette based dressing. You can be creative when it comes to making your own. That’s what I like about it.
So easy and simple. Forget about the store bought dressings that have the unwanted and un needed added ingredients.
For this vinaigrette, you only need five simple ingredients: dijon mustard, maple syrup, olive oil, red wine vinegar, and garlic powder.
Whisk all of those ingredients in a small bowl, and set aside while you make the salad.
Wash your brussel sprouts good, let them dry or pat dry with a paper towel to get most of the water off.
Chop the ends off of the brussel sprouts, cut in half the long way, and chop them into thin slices so they look shredded.
Once they are all chopped up, add them to a salad bowl, or medium sized serving bowl.
Dice your red onion, and apple. Add to brussel sprouts on top.
Add your pine nuts on top as well.
Those colors look so beautiful and vibrant together!
Lastly, add your maple dijon vinaigrette all over. Mix together to get it combined. Serve and enjoy!
