Harvest Brussel Sprout Salad With Maple Dijon Vinaigrette

Ingredients
  

  • 1 lb. Brussel Sprouts Chopped up/shredded
  • 1 Granny Smith Apple
  • 1/3 Cup Diced Red Onion
  • 1 TBSP Dijon Mustard
  • 2 TSP 100% Pure Maple Syrup
  • 2 TBSP olive oil
  • 3 TBSP Red Wine Vinegar
  • 1/2 TSP Garlic Powder
  • 1 TBSP Pine Nuts (optional)

Instructions
 

  • First you want to make your vinaigrette dressing. Mix together mustard, maple syrup, olive oil, garlic powder, and vinegar. Set aside.
  • Wash brussel sprouts, and pat dry.
  • Chop ends off of brussel sprouts, cut in half the long way, then cut thin slices to resemble a shredded look.
  • Add to medium size serving bowl, or salad bowl.
  • Dice up your red onion into small pieces.
  • Cut up your apple into small cubes.
  • Add onion and apple on top of brussel sprouts.
  • Add the pine nuts.
  • Drizzle vinaigrette dressing on top, and mix together until everything is combined with vinaigrette.
