Harvest Brussel Sprout Salad With Maple Dijon Vinaigrette

Servings: 3 People

Ingredients
  

  • 1 lb. Brussel Sprouts Chopped up/shredded
  • 1 Granny Smith Apple
  • 1/3 Cup Diced Red Onion
  • 1 TBSP Dijon Mustard
  • 2 TSP 100% Pure Maple Syrup
  • 2 TBSP olive oil
  • 3 TBSP Red Wine Vinegar
  • 1/2 TSP Garlic Powder
  • 1 TBSP Pine Nuts (optional)

Method
 

  1. First you want to make your vinaigrette dressing. Mix together mustard, maple syrup, olive oil, garlic powder, and vinegar. Set aside.
  2. Wash brussel sprouts, and pat dry.
  3. Chop ends off of brussel sprouts, cut in half the long way, then cut thin slices to resemble a shredded look.
  4. Add to medium size serving bowl, or salad bowl.
  5. Dice up your red onion into small pieces.
  6. Cut up your apple into small cubes.
  7. Add onion and apple on top of brussel sprouts.
  8. Add the pine nuts.
  9. Drizzle vinaigrette dressing on top, and mix together until everything is combined with vinaigrette.
  10. Enjoy!
