Hawaiian BBQ Chicken Lettuce Wraps

These Hawaiian bbq chicken lettuce wraps are the perfect mixture of sweet and savory.

Some people like pineapple on their pizza, some don’t. I personally do. Pineapple is actually a great ingredient for lots of savory dishes.

For these Hawaiian bbq chicken lettuce wraps, the pineapple adds the perfect sweetness. Some of you may think “ew”. But don’t knock it til you try it!

Its a pretty simple and quick recipe. You can either use thick chicken breast, or thin. I prefer thin. It cooks quicker. I used fresh cut pineapple, but you can use whichever type of pineapple you’d like. As long as its in small bite size cubes.

You will also need bbq sauce, tomato paste, garlic powder, onion powder, and half of a red onion, diced.

You first want to mix together your sauce ingredients together ( bbq sauce, onion powder, garlic powder, tomato paste. Let that sit so the flavors can combine while you cook your chicken.

When you place your chicken in your sauté pan, you want to make sure to season it with salt and pepper.

I cooked my chicken on medium heat for about 8-10 minutes total. You want to make sure each piece is done. I could tell mine was done when there were no more pink pieces, and the center wasn’t translucent.

You are going to cook them for an additional 3-4 minutes after adding the sauce mixture to your pan.

You want to make sure each piece of chicken is coated with the sauce.

When your chicken is done, add it to a big lettuce leaf (I used iceberg lettuce. You can use whichever type of lettuce you prefer.)

Add your pineapple and onions on top of your chicken. Enjoy!!

Hawaiian BBQ Chicken Lettuce Wraps

Servings 4 Wraps

Ingredients
  

  • 1 Head Iceberg Lettuce If you prefer another type of lettuce, you can use whichever type you'd prefer.
  • 1 LB. Chicken Breast, cut into bite size pieces I used thin sliced chicken breasts just because they cook faster. You can use thicker chicken breasts if you'd prefer.
  • 1 Cup Fresh Pineapple, cut into bite size pieces
  • 1/2 Red Onion, diced
  • 1/2 Cup bbq sauce
  • 1 TBSP tomato paste This ingredient is optional. It won't make or break the recipe. It just makes the sauce a little thicker.
  • 1/4 TSP Garlic Powder
  • 1/2 TSP Onion Powder
  • Salt & Pepper to taste
  • olive oil

Instructions
 

  • First you want to make your sauce. In a small bowl, add bbq sauce, onion powder, garlic powder and tomato paste. Mix well until everything is combined. Set aside.
  • In large sauté pan, add some olive oil over medium heat. Add cut up chicken breast to pan. Season with some salt and pepper. Cook for about 8-10 minutes until each piece is cooked.
  • Once your chicken is done, add your sauce mixture to pan and mix together until each piece of chicken is coated. Turn heat down to low and cook for another 3-5 minutes covered.
  • Prepare your lettuce leaves. Make sure they are large enough.
  • When your chicken is done, spoon bbq chicken onto lettuce leaf. Add pineapple and red onions on top.
  • Enjoy!
