If you’re growing a vegetable garden, chances are you have tomatoes and basil. Maybe some garlic? If you have garlic, that’s impressive! Ive tried growing garlic before…complete fail! Anyways, if you need to use up some tomatoes and basil, then you have to try making this healthy bruschetta chicken!
Bruschetta is a favorite of mine for an appetizer, or to mix in or put on top of dishes, like this one! Its pretty basic and simple to make, yet so flavorful!
Now, if you don’t know exactly what bruschetta is, its basically sliced and toasted baguette type bread, topped with this delicious mixture of tomatoes, garlic, and Italian herbs.
Obviously, we are missing the bread in this recipe, but thats ok! Who needs all of those carbs? Instead, we are topping some sautéed chicken breast off with this bruschetta mixture.
I could have literally eaten this by the spoon. It smelt amazing as I was mixing it all together. This is surely a summer time dish. The flavors of the basil and tomatoes scream summer!
So, you pretty much cook your chicken in a pan with some olive oil, and dump your bruschetta mixture on top of the chicken, and drizzle it with some balsamic glaze. Super duper easy!
Oh, and obviously you have to enjoy it as well!
I want to just add in that if there are any left overs to this dish…the leftovers are even better!! The flavors settle in and are 10 times more flavorful!
