Healthy Chicken Burrito Bowls

These healthy chicken burrito bowls are perfect for meal prep or, if you want to have a nice, clean and healthy meal!

They are bursting with fresh and whole flavors. Having very little carbs, calories and fat. But keeping you super full and satisfied.

The sriracha lime sauce is my favorite part of this recipe! Simple to make and guilt free. Using a non fat greek yogurt as the base. 0% fat, plain greek yogurt is a great base to use for cream sauces, such as this one.

Cauliflower rice is a great rice alternative if you are looking to go the low carb route. But, it can also be very bland and blah. If you season it the right way, it can actually be very tasty!

Mixing chopped cilantro, lime juice, salt and pepper with the cauliflower rice gave it the best flavors! I could eat it all day!

Seasoning the ground chicken with the right spices, gives it that perfect taco flavor! I’ve said this before, and ill say it again…you don’t need to buy those taco seasoning packs to season any type of meat! Just a few spices mixed with some salt is the way to go!

Assembling these bowls was fun! I like to make my food look nice and neat, obviously for presentation purposes. But it also just looks way more appetizing.

These would be perfect for a meal prep. This recipe made about 4 servings.

Healthy Chicken Burrito Bowls

These healthy chicken burrito bowls are low in fat, carbs and calories! Bursting with fresh flavors, and super filling!

Ingredients
  

  • olive oil
  • 1 clove of garlic, minced
  • 4 cups cauliflower rice I used frozen
  • 1/4 cup fresh cilantro, chopped If you aren't a fan of cilantro, you can use green onions instead!
  • 1 tablespoon lime juice
  • 1 lb. ground chicken
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon paprika
  • 1 15 oz. can of black beans, rinsed and drained
  • 2 cups frozen corn, cooked
  • 1 ½ cups cherry tomatoes, quartered
  • 1/2 cup chicken stock
  • salt + pepper, to taste

For The Sriracha Lime Sauce

  • 1 tablespoon lime juice
  • 2 tablespoons sriracha
  • 1/2 cup non fat plain greek yogurt

Instructions
 

  • Mix together all of your ingredients for the sriracha lime sauce. Set aside.
  • Heat about 1 tablespoon of olive oil in a large sauté pan over medium heat.
  • Add garlic with a pinch of salt. Sauté until fragrant.
  • Add cauliflower rice to pan, along with chicken stock, some salt and pepper.
  • Cover pan and cook rice for about 7-10 minutes. Until chicken stock is evaporated.
  • Place cooked rice in bowl. Mix in 1 tablespoon of lime juice and cilantro. Cover with foil to keep warm and set aside.
  • Using same pan, add more olive oil over medium heat and add chicken.
  • Season chicken with cumin, chili, garlic salt, paprika and black pepper. Stir everything around and cook until chicken is done.
  • You can either put together your bowls as a meal prep, or serve immediately!
  • Enjoy!
