Ingredients
Method
- Mix together all of your ingredients for the sriracha lime sauce. Set aside.
- Heat about 1 tablespoon of olive oil in a large sauté pan over medium heat.
- Add garlic with a pinch of salt. Sauté until fragrant.
- Add cauliflower rice to pan, along with chicken stock, some salt and pepper.
- Cover pan and cook rice for about 7-10 minutes. Until chicken stock is evaporated.
- Place cooked rice in bowl. Mix in 1 tablespoon of lime juice and cilantro. Cover with foil to keep warm and set aside.
- Using same pan, add more olive oil over medium heat and add chicken.
- Season chicken with cumin, chili, garlic salt, paprika and black pepper. Stir everything around and cook until chicken is done.
- You can either put together your bowls as a meal prep, or serve immediately!
