Healthy Chicken Burrito Bowls
These healthy chicken burrito bowls are low in fat, carbs and calories! Bursting with fresh flavors, and super filling!

- olive oil
- 1 clove of garlic, minced
- 4 cups cauliflower rice I used frozen
- 1/4 cup fresh cilantro, chopped If you aren't a fan of cilantro, you can use green onions instead!
- 1 tablespoon lime juice
- 1 lb. ground chicken
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon garlic salt
- 1/4 teaspoon paprika
- 1 15 oz. can of black beans, rinsed and drained
- 2 cups frozen corn, cooked
- 1 ½ cups cherry tomatoes, quartered
- 1/2 cup chicken stock
- salt + pepper, to taste
For The Sriracha Lime Sauce
- 1 tablespoon lime juice
- 2 tablespoons sriracha
- 1/2 cup non fat plain greek yogurt
Mix together all of your ingredients for the sriracha lime sauce. Set aside.
Heat about 1 tablespoon of olive oil in a large sauté pan over medium heat.
Add garlic with a pinch of salt. Sauté until fragrant.
Add cauliflower rice to pan, along with chicken stock, some salt and pepper.
Cover pan and cook rice for about 7-10 minutes. Until chicken stock is evaporated.
Place cooked rice in bowl. Mix in 1 tablespoon of lime juice and cilantro. Cover with foil to keep warm and set aside.
Using same pan, add more olive oil over medium heat and add chicken.
Season chicken with cumin, chili, garlic salt, paprika and black pepper. Stir everything around and cook until chicken is done.
You can either put together your bowls as a meal prep, or serve immediately!
