Healthy + Easy Peanut Butter Protein Bars

These healthy and easy peanut butter protein bars are the perfect snack that will keep you full and satisfied!

Protein bars can be a great snack in between meals to keep you full and satisfied. They can also be expensive, or filled with artificial ingredients, high amounts of sugar, and barley any protein.

Looking at some of the protein bar nutrition facts and ingredients list, I sometimes wonder… what’s the point of calling them a protein bar?

These guys are awesome. They have only 4 natural ingredients. Cant complain there!

Honey is such a great natural sweetener. Not to mention all of the health benefits honey has to offer.

When mixing honey and natural peanut butter together, they create amazing flavors. For this recipe, you want to make sure to use all natural peanut butter. You don’t want any added sugar. The honey makes these bars sweet enough!

I used a non stick pan for this recipe. When I press your mixture into your pan, you want to make sure to spray with non stick spray, or line with wax paper. Unless you are using a great quality non stick pan. My bars came right out of the pan with a few slaps.

There they are! After being chilled for 1 hour in the fridge, they are ready to be cut up into delicious and nutritious protein bars!

You can cut them up as big or as small as you’d like. Its personal preference really.

These protein bars kept very well in a tightly sealed container, with wax paper in between each. You want to make sure you keep these guys in the fridge.

They have the perfect consistency of soft but chewy. Very comparable to a Clif protein bar. Maybe a little easier on the jaw.

Healthy + Easy Peanut Butter Protein Bars

soft but chewy peanut butter protein bars with the perfect sweetness of honey
Servings 15 Bars

Ingredients

  • 1 Cup Chocolate Peanut Butter Powder or Protein Powder I used the PB2 brand of peanut butter powder. You can use a protein powder if you'd like, but I prefer the peanut butter powder just because they don't add any artificial sweeteners.
  • 1/2 Cup Honey
  • 1 Cup all natural peanut butter, smooth
  • 1 1/2 Cups Old Fashioned Oats, ground up You can use a food processor or food blender to grind up your oats.

Instructions

  • Prepare a 9x9 non stick pan. Line with wax paper or non stick spray. I didn't spray my pan or use wax paper, and my bars came out with a few taps on the bottom of my pan. It's a risk you take!
  • Grind your oats in a food blender or processor for about 1 minute.
  • In a medium microwave safe bowl, add your peanut butter and honey. Microwave for 30 seconds. Stir until well combined.
  • Microwave for an additional 30 seconds. Stir until well combined.
  • Add in ground up oats, and peanut butter powder. Stir until well combined. Things will start to get sticky, tacky and thick.
  • Once everything is combined well, dump in your 9x9 pan. Press down into pan evenly. Chill for 1 hour.
  • After 1 hour, take out bars. Turn them onto a cutting board. Cut bars into squares. Store left overs in tightly sealed container with wax paper separating each. Store in fridge.
  • Enjoy!
