Healthy + Easy Peanut Butter Protein Bars

soft but chewy peanut butter protein bars with the perfect sweetness of honey
Servings: 15 Bars

Ingredients
  

  • 1 Cup Chocolate Peanut Butter Powder or Protein Powder I used the PB2 brand of peanut butter powder. You can use a protein powder if you'd like, but I prefer the peanut butter powder just because they don't add any artificial sweeteners.
  • 1/2 Cup Honey
  • 1 Cup all natural peanut butter, smooth
  • 1 1/2 Cups Old Fashioned Oats, ground up You can use a food processor or food blender to grind up your oats.

Method
 

  1. Prepare a 9x9 non stick pan. Line with wax paper or non stick spray. I didn't spray my pan or use wax paper, and my bars came out with a few taps on the bottom of my pan. It's a risk you take!
  2. Grind your oats in a food blender or processor for about 1 minute.
  3. In a medium microwave safe bowl, add your peanut butter and honey. Microwave for 30 seconds. Stir until well combined.
  4. Microwave for an additional 30 seconds. Stir until well combined.
  5. Add in ground up oats, and peanut butter powder. Stir until well combined. Things will start to get sticky, tacky and thick.
  6. Once everything is combined well, dump in your 9x9 pan. Press down into pan evenly. Chill for 1 hour.
  7. After 1 hour, take out bars. Turn them onto a cutting board. Cut bars into squares. Store left overs in tightly sealed container with wax paper separating each. Store in fridge.
  8. Enjoy!
