Method
- Preheat oven to 350 degrees.
- Cream together butter and sugar.
- Add your eggs and mix until combined.
- Add cream cheese. Mix until well combined.
- Add your flour, salt, baking powder, vanilla extract, lemon juice and lemon zest. Mix well.
- Carefully fold in blueberries using a spoon.
- Spray your loaf pan/pans with non stick spray.
- You can either use two loaf pans or one. I used one 9x5 loaf pan.
- Pour batter in pan/pans.
- If you are using one pan, bake for 90 minutes (1 1/2 hours) OR if you are using two loaf pans, bake for 60 minutes (1 hour).
- Let cool completely until cutting it.
