Whenever I think of a sweet loaf bread to make, I always think of banana nut bread. I never broaden my horizons. This lemon and blueberry cream cheese bread is one for the books!
I happened to have an abundance of lemons. They were on sale at the market and I couldn’t resist. I also had some blueberries that were about to go bad.
The flavor combination of blueberry and fresh lemon is one of the best. Especially come spring and summer time. Blueberry lemonade, blueberry citrus cheesecake, salad with fresh blueberries and a lemon vinaigrette…the list goes on and on.
It is insane how much moisture and density cream cheese can add to a recipe. I’m thinking the amount of eggs have something to do with the density of this bread, but the cream cheese has alot to do with the moisture.
If you can notice…almost half of my loaf is missing. I had to of course try a slice to make sure it was blog worthy. But the true culprit was my husband. I knew I should have left a note next to the loaf saying “DO NOT EAT”.
Don’t get me wrong, he is my number one taste tester, and tries every single thing I bake and cook.
Before I called it a night, I let the bread cool down a bit, put some tin foil on top and headed upstairs for some shut eye. In the back of my mind, I knew there was an entire loaf of delicious lemon and blueberry cream cheese bread waiting for its photoshoot in the morning.
Well, I was wrong. I woke up, went downstairs and had my very strong coffee. When I went over to the wrapped up loaf but noticed a few crumbs around the pan…hmmmm.
So, I took the tin foil off, to my surprise…almost half of the loaf was missing!
…my husband. I looked at him, and he said “It was amazing!”.
Thank god I still had a decent amount to photograph! I must say myself, this bread is very delicious, very dense, very flavorful, and very dangerous!
