Lemon and Blueberry Cream Cheese Bread

Servings: 1 loaves

Ingredients
  

  • 1/2 Cup Unsalted Butter, Softened
  • 8 OZ. Cream Cheese, softened
  • 1 1/2 Cups Sugar
  • 1 TSP Vanilla Extract
  • 4 Large Eggs
  • 2 Cups All Purpose Flour
  • 1 1/2 TSP Baking Powder
  • 1/2 TSP Salt
  • 1-2 Cups Fresh Blueberries Depending on the amount of blueberries you want in your bread. I used 2 cups and I think it was a little too much. Personal preference!
  • 1 Lemon, Juiced
  • 1/2 TSP Lemon Zest

Method
 

  1. Preheat oven to 350 degrees.
  2. Cream together butter and sugar.
  3. Add your eggs and mix until combined.
  4. Add cream cheese. Mix until well combined.
  5. Add your flour, salt, baking powder, vanilla extract, lemon juice and lemon zest. Mix well.
  6. Carefully fold in blueberries using a spoon.
  7. Spray your loaf pan/pans with non stick spray.
  8. You can either use two loaf pans or one. I used one 9x5 loaf pan.
  9. Pour batter in pan/pans.
  10. If you are using one pan, bake for 90 minutes (1 1/2 hours) OR if you are using two loaf pans, bake for 60 minutes (1 hour).
  11. Let cool completely until cutting it.
  12. Enjoy!
