Lemon Brownies With Lemon Zest Glaze

These lemon brownies with lemon zest glaze are the brownie of the summer! They are zesty, sweet, dense and refreshing!

Move over brownies!…lemon brownies with lemon zest glaze are gonna be a hit for the summer!

Not that I don’t enjoy a delicious homemade brownie, but they aren’t my favorite. I do love my chocolate, but I have to be in the mood for it.

These lemon brownies are a great alternative for the summer time!

Like all of the recipes on my blog, these guys are super easy to make. Lots and lots of lemon juice and zest!

This recipe calls for buttermilk, which I never ever…ever have on hand. It’s kinda pricey, and it would go bad because I wouldn’t use it enough.

You can make your own buttermilk! And its so stinkin easy…

All you have to do is mix milk, or half and half with some vinegar. Let it sit for 5 minutes to let it curdle, and there you have it. Homemade buttermilk. Simple, right?!

I’ve said it before and I’ll say it again, I absolutely love citrus anything when summer comes around. It’s so refreshing, and can jazz up any recipe. Even drinks!

The smell, taste and even look of lemons is so refreshing!

I would say, my favorite thing about this recipe is the glaze. It’s not too much, and adds the perfect sweetness to the zestyness. And it soaks in the top of the brownie a little, making even more moist!

Lemon Brownies With Lemon Zest Glaze

These lemon brownies with lemon zest glaze are the brownie of the summer! They are zesty, sweet, dense and refreshing!

Ingredients
  

  • 10 tbsp melted butter, unsalted
  • cup granulated sugar
  • 2 eggs, room temperature
  • 1/4 cup buttermilk *see note if you don't have buttermilk, or want to simply make your own!
  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 2 tbsp fresh lemon juice
  • tsp lemon zest + more for garnish
  • 1/2 tsp real lemon extract

For The Lemon Zest Glaze

  • 1 cup powdered sugar
  • 3 tbsp lemon juice
  • lemon zest for garnish

Instructions
 

  • Preheat oven to 325°.
  • Spray an 8×8 baking pan with non stick spray or line with parchment paper. Set aside.
  • In bowl of a stand mixer, or hand held mixer, mix together the melted butter and granulated sugar.
  • Add in eggs and buttermilk. Mix and set aside.
  • In a medium bowl, whisk together flour and salt. Add to wet ingredients and mix until flour is incorporated.
  • Stir in lemon juice, extract and lemon zest.
  • Pour batter in baking pan.
  • Bake in preheated oven for 30-35 minutes.
  • Let cool completely.
  • Make glaze by mixing confectioners sugar and lemon juice together.
  • When brownies are completely cooled, pour glaze over and spread evenly. Sprinkle with lemon zest.
  • Let the glaze harden before cutting into squares.
  • I kept mine in an air tight container in fridge for a nice cool treat. But you can keep them out of fridge. If its hot out, I suggest you keep them in fridge so they don't get too sticky and messy.
  • Enjoy!

Notes

*To make your own buttermilk, mix 1/4 cup of milk or half and half with 3/4 teaspoons of white vinegar. Let sit for 5 minutes to curdle and there you have it! Homemade buttermilk.
