- Preheat oven to 350º.
- In an oven safe skillet, heat up olive oil over medium-high heat. Place chicken breast in skillet, season with salt and pepper. Cook on each side for 3 minutes. Transfer chicken to plate when done but keep skillet on heat, lowered to medium-low, and keep juices from chicken in skillet.
- Add your minced garlic to skillet and cook for one minute. Add your half and half, red pepper flakes, chicken broth, parmesan cheese and tomatoes to skillet. Cook for about 5 minutes, stirring frequently.
- Add chicken back to skillet and spoon sauce over chicken breasts. Cook in preheated oven for about 10 minutes (depending on the thickness of chicken breasts).
- When done, sprinkle fresh basil leaves on top.
