Marry Me Chicken

This marry me chicken surely has a unique name, but its flavors are flavors you can’t and won’t want to forget! Chicken is roasted in a bath of creamy, goodness along with cherry tomatoes and garlic. Topped with fresh basil. UM, yes please.

When I saw this marry me chicken recipe, I had to look twice at the name. “marry me chicken” is not a recipe name you hear often. But I understand why it’s called that. At least, I think I know why.

Imagine you are dating someone, and decide to make dinner for that special person. They take one bite of this delicious meal, and the first thing that comes to their mind is “wow, this is amazing, this person can cook! I want to marry them and spend the rest of my life eating their delicious food!”.

Anyone can make this recipe. So, if you’re looking to lure in that certain someone, make this. Trust me. If their eyes don’t bug out of their head trying the first bite like me and my husbands did, then that person needs new taste buds or something!

Here they are, my top three favorite ingredients to cook with in the summer time. The flavors never ever get old.

You can either use thick chicken breast, or thin cut. Im a fan of the thin cutlets. Just keep in mind, cooking time will be different depending on the thickness.

Start off by adding olive oil to an oven safe skillet. Most are oven safe up to 350º, but double check to make sure!!!

Season your chicken breast with salt and pepper. Cook on each side for about 3 minutes per side. If chicken is thicker, then up the cooking time.

When they are done cooking, you want to transfer them to a plate, and lower the heat to medium-low, and keep the juice from the chicken in the skillet. Thats where some of the flavor comes from!

Add your minced garlic to the skillet and cook for about 1 minute.

This smelt AMAZING by the way. Holy moly.

When your garlic is starting to turn brown, add your half and half, parmesan cheese, chicken broth, pepper flakes and halved cherry tomatoes.

You want to cook this for about 5 minutes, stirring frequently.

Add your chicken breasts back to the skillet, and spoon the sauce over chicken breasts.

Cook in the oven for about 10 minutes, again depending on how thick your chicken breasts are.

Sprinkle some fresh basil leaves all over and enjoy!! Im telling you, make this recipe!!!! It was SO GOOD!

Ingredients
  

  • 1 TBSP olive oil
  • 3-4 Chicken Breasts, skinless & boneless I used thin cutlets, if you use thicker breasts, make sure to up the cook time.
  • Salt
  • Pepper
  • 3 Cloves Garlic (minced)
  • 1 TSP Red Pepper Flakes
  • 3/4 Cup Chicken broth
  • 1/2 Cup Half & Half
  • 2 Cups Cherry Tomatoes (halved)
  • 1/2 Cup Grated Parmesan Cheese
  • Fresh basil leaves, julienned If you dont know what julienned means, its a fancy word for thin cut strips!

Instructions
 

  • Preheat oven to 350º.
  • In an oven safe skillet, heat up olive oil over medium-high heat. Place chicken breast in skillet, season with salt and pepper. Cook on each side for 3 minutes. Transfer chicken to plate when done but keep skillet on heat, lowered to medium-low, and keep juices from chicken in skillet.
  • Add your minced garlic to skillet and cook for one minute. Add your half and half, red pepper flakes, chicken broth, parmesan cheese and tomatoes to skillet. Cook for about 5 minutes, stirring frequently.
  • Add chicken back to skillet and spoon sauce over chicken breasts. Cook in preheated oven for about 10 minutes (depending on the thickness of chicken breasts).
  • When done, sprinkle fresh basil leaves on top.
  • Enjoy!!!!
