This mixed berry crisp is bursting with sweetness! A mixture of some of the tastiest summer berries all in one. Topped with a buttery, oat crumble, and baked until bubbly and warm.

Oh…and cold, vanilla ice cream! Cant forget about that!

I usually enjoy a nice fruit crisp in the cooler months, or during the fall/winter. But why not make it in the summer, and top it with cold ice cream?!

There are quite a few recipes out there for berry crisps, and what not. And a lot of them are usually super watery, or have too much filling, and not enough topping.

This crisp has the perfect balance of everything. The right amount of berries, and just enough crumble. And extra ice cream!

The great thing about this recipe is that it’s easy, and you can make it ahead of time if you want.

Not the best baker?

So, I love to bake. Its very relaxing for me. But a lot of people I know either hate it, or just aren’t the best at it. Which is totally fine!

This recipe is perfect for those who aren’t into baking. It’s one of those recipes that don’t require all of those “skills” or “love” for baking.

Mixed Berry Crisp

This recipe for mixed berry crisp is the perfect sweet treat for summer! Mixed berries topped with a buttery, crunchy crumble and vanilla ice cream!

Ingredients
  

For Filling

  • 5 cups fresh or frozen mixed berries I used frozen (no need for thawing)
  • 1/4 cup granulated sugar
  • 1 tbsp corn starch
  • 1/2 tsp cinnamon

For Topping

  • 1 cup all purpose flour
  • 3/4 cups old fashioned oats
  • 1/2 cup brown sugar, light or dark
  • 1/4 tsp salt
  • 1/2 cup unsalted butter diced, cold
  • vanilla ice cream for serving

Instructions
 

  • Preheat oven to 375°. Grease an 8 inch, or 7 x 11 inch baking dish.
  • Place the mixed berries in greased baking dish; sprinkle sugar, corn starch and cinnamon on top of berries, mix together and set dish aside.
  • In a medium bowl, mix together the oats, flour, brown sugar and salt. Cut in the pieces of butter with a fork or by hand. Until mixture resembles coarse crumbs.
  • Bake in preheated oven for 35-40 minutes, until topping is light brown and filling is bubbly.
  • Serve warm with a scoop of vanilla ice cream, if desired.
  • Enjoy!
